Kissed Pizza with Double Filling

The kissed pizza with double filling is a high-hydration white pizza made by hand, so without a mixer, which differs from the classic white pizza cut in half and filled.

The difference lies in the fact that the kissed pizza is cooked in 2 overlapping layers (in our case we folded 2 round pizzas in half to obtain 2 kissed pizzas to fill each differently.

Ingredients for the kissed pizza with double filling

  • 4 cups cups Manitoba flour (or strong flour 320 w)
  • 1.5 cups cold water
  • 2 tsp salt
  • 1 tsp fresh brewer's yeast
  • 1 tbsp extra virgin olive oil
  • 1.5 tbsp extra virgin olive oil
  • 1 clove garlic
  • 1.1 lbs lbs turnip greens
  • as needed extra virgin olive oil
  • 2 sausages
  • 3.5 oz oz cooked ham
  • 9 oz oz buffalo mozzarella

Preparation of kissed pizza with double filling

  • To prepare the kissed pizza with double filling, first, of course, the night before, prepare the dough following my recipe.

  • After resting in the fridge, take it out, let it come to room temperature for at least 20 minutes.

    Dust the work surface or counter with semolina flour, divide the dough into 2 equal parts.

  • Roll out each pizza as round as possible by moving from the center to the edges.

    Preheat the oven to 482°F in static mode.

  • Place the Roman kissed pizza on each baking sheet, drizzle with plenty of extra virgin olive oil then fold it in half moon, drizzling again on top with more oil.

  • Bake on the lowest shelf of the oven or directly in contact with the oven surface and cook for 12/15 minutes.

  • Meanwhile, prepare the filling by boiling the turnip greens until tender, in a pan, sauté the sliced garlic clove.

    Add the turnip greens and let them absorb the flavors, salt, and remove from the pan.

  • Crumble the sausages and brown them in the same pan where you cooked the greens, add the greens and sauté everything for a few minutes.

  • Now the base for the Roman kissed pizza is ready, so take it out of the oven, open it to release moisture for 5 minutes then fill it.

    One with turnip greens and sausages, add the chopped mozzarella, and the second with cooked ham and the remaining mozzarella in cubes or slices.

  • Bake again in the middle shelf of the oven for another 5 minutes until the surface is golden and the mozzarella melted.

    Serve them immediately hot, crunchy, and steaming.

How to store kissed pizza with double filling

You can store them in the fridge wrapped in plastic wrap for 2 days, preferably without filling.

If you prefer, you can also freeze them once cooked and cooled without filling, then thaw at room temperature, fill, and bake.
