Don’t think of tofu as a boring food. If it’s of good quality and cooked well, it can become a tasty, light, and very nutritious dish. Among my favorite ways to prepare it is marinated tofu, easy and very tasty. However, I tried the chickpea cutlets, and the whole family fell in love with them! I used both plain and smoked tofu, much more flavorful. I then served them with a quick avocado cream that I’m sure you’ll like.

Ingredients for Preparing Tofu Cutlets

  • 4 blocks tofu (plain or smoked)
  • 0.7 oz parsley
  • 0.7 oz basil
  • 2 cloves garlic
  • to taste salt
  • 3.5 oz breadcrumbs
  • 6 tbsps extra virgin olive oil
  • 6 tbsps soy sauce
  • 1 avocado
  • 1 tbsp soy or plain Greek yogurt (Generous)
  • to taste salt and chili powder

Steps

  • Chop garlic, basil, and parsley. Mix with salt and breadcrumbs. Cut the tofu blocks in half lengthwise.

  • Emulsify soy sauce and extra virgin olive oil. Brush the tofu slices and bread them in the flavored breadcrumbs. Place them on a baking tray covered with parchment paper, drizzle with a little oil, and bake at 350°F for about 30 minutes, they should be golden.

  • Prepare the avocado cream by mashing the ripe pulp with yogurt, salt, and chili powder. Serve the cutlets with the cream and fresh vegetables.

Storage

You can store the cutlets in the fridge for a couple of days.
