Ingredients for preparing crêpes with ragù

  • 3 eggs
  • 1 cup cup milk
  • 1 cup cup all-purpose flour
  • 1 1/2 tbsp tbsp butter
  • 1 pinch salt
  • 1 cup cup milk

Steps for preparing crêpes with ragù

  • Let’s prepare the crêpes. In a tall container, add the eggs and milk and mix quickly. Add the melted butter, salt, and mix. Finish with the sifted flour. I then blended it with an immersion blender to avoid lumps.

  • In a lightly greased non-stick pan, pour small quantities of batter. Rotate the pan to spread the mixture well. Cook for a few minutes on each side. Continue this way until the batter is finished.

  • Let’s prepare the béchamel by toasting the flour with the butter. Add the milk, salt, and flavor with nutmeg. Cook over low heat, stirring constantly until the béchamel thickens.

  • Place a crêpe on a plate. Spread half with béchamel and then ragù. I used vegetarian ragù. Place some cheese slices on top and fold in half to form a half-moon, then fold again. Place the crêpes on a baking tray lined with parchment paper and garnish with a layer of béchamel, parmesan, and a drizzle of oil.

  • Preheat the static oven to 356°F. Bake and cook for 20-25 minutes. Remove from the oven and serve!

Storage

You can store the crêpes in the fridge for two or three days.
