Ingredients for the Savory Pie with Red Onions and Gorgonzola
- 14 oz shortcrust pastry
- 2.2 lbs Tropea red onions
- 1 tbsp sugar
- 3.5 oz butter
- 7 oz Gorgonzola (sweet or spicy)
- 1.75 oz walnut kernels
- 1 sprig rosemary
- 1 tbsp extra virgin olive oil
- to taste salt
- to taste black pepper

Steps to Prepare the Savory Pie with Red Onions and Gorgonzola
To prepare the savory pie with red onions and Gorgonzola, first make the shortcrust pastry and let it rest in the fridge for at least 30 minutes.
In the meantime, peel and thinly slice the Tropea red onions.
Melt the butter in a large pan and sauté the onions over low heat for 10 minutes.
Then salt them and sprinkle with sugar cooking them for another 10 minutes.
If you see the onions start to burn, add a couple of tablespoons of water but don’t overdo it; they should be soft and almost caramelized.
Chop the rosemary needles and add them just before turning off the heat to the onions.
Preheat the oven to 428°F in static mode, then roll out the shortcrust pastry with the help of a rolling pin.
Spread it to cover the mold, distribute the onions evenly, sprinkle with chopped walnuts.
Finally, add the Gorgonzola with its crust removed and cut into pieces, drizzle with extra virgin olive oil.
Finally, bake the Savory Pie in the middle shelf of the oven for at least 30/35 minutes.
Remove from the oven, let it rest for 5 minutes before removing it from the mold, and serve hot or at room temperature, sprinkling with more chopped walnuts and a few rosemary needles.
How to Store the Savory Pie with Red Onions
You can store it in the fridge for 2 days in an airtight container.
If you prefer, you can freeze it and then let it thaw at room temperature.
