Ingredients for Pan-fried Chicken Burgers
- 1.1 lbs chicken breast
- 1/3 cup sour cream
- 3 eggs (medium-small)
- 1 1/4 cups Asiago cheese (semi-aged, grated)
- 1/3 cup chickpea flour
- 1 tbsp chopped parsley
- 2 pinches salt
- to taste black pepper (ground)
- to taste extra virgin olive oil (for cooking the burgers)

Steps to Prepare Pan-fried Chicken Burgers
Preparing the pan-fried chicken burgers is very simple even if you don’t have ground chicken or a meat grinder.
First clean the chicken breast of any small bones and excess fat, then with a smooth blade knife, cut it into thick slices and then into strips.
Then chop it with the knife (if you have a mezzaluna it will be easier).
In a large bowl, place the eggs, sour cream, and grated cheese.
Add the freshly chopped chicken, season with salt, pepper, and chopped fresh parsley.
Finally, incorporate the chickpea flour which helps absorb the liquids and compact everything during cooking.
If you don’t have chickpea flour, you can use all-purpose or whole wheat flour but in a smaller amount.
Take a spoonful of the mixture and place it in a greased and heated pan.
Flatten with the back of the same spoon to give it a flat, round shape about 3/8 inch thick.
Cook for 3 or 4 minutes until they are golden on one side, then flip and cook until golden on the other side as well.
Remove them from the pan using a spatula and place them on a serving plate, cover with another plate to keep them warm.
If you have time available, once you’ve prepared the mixture for the Pan-fried Chicken Burgers cover it with plastic wrap and let it rest in the refrigerator for 30 minutes.
How to Store Chicken Burgers
You can store them once cooked and cooled in the fridge inside a container with a lid for 2 days.
If you prefer, you can freeze them well spread out on a tray and then after a few hours gather them in a freezer bag.
