Ingredients
- 1 3/4 cups all-purpose flour
- 1 tbsp fresh yeast
- 2 tbsp sugar
- 1/4 cup milk (warm)
- 1 1/2 tbsp butter (melted)
- 1 egg (medium)
- 1/4 cup water (warm)
- 2/3 cup raisins (soaked in water)
- 1 tsp lemon zest (grated)
- 1 vanilla pod
- 1 quart peanut oil
- 2 tbsp sugar
- Half tsp ground cinnamon (optional)

Steps
Dissolve the fresh yeast in a little warm milk taken from the 70 ml and with a teaspoon of sugar also taken from the total. In the bowl pour the flour, the remaining sugar, the remaining warm milk, the vanilla, and the cold melted butter.
Continue by adding the yeast, the warm water, the beaten egg before inserting it, and the grated lemon zest.
Combine the raisins first soaked in warm water, squeezed, patted with paper towels, and floured. Mix well and let the batter rise covered with plastic wrap for 2 hours. Pour the oil into a small deep saucepan and bring it to temperature.
With the help of 2 teaspoons, scoop small portions of batter and let them drop into the hot oil. During cooking, about 2-3 minutes for each piece, they will float up on their own and turn. Once golden, collect them and roll them in a plate with sugar and cinnamon. Place them on a plate and serve the Carnival Fritters piping hot.
Tip
Preparing the dough in the morning to fry in the afternoon can reduce the fresh yeast to 5 grams.
