Ingredients for the Yogurt Loaf Cakes without Butter

  • 2 eggs (medium)
  • 1/2 cup Greek yogurt
  • 1/2 cup granulated sugar
  • 1 cup all-purpose flour
  • Half packet baking powder
  • 3 1/2 tbsp milk

Preparation of Mini Yogurt Loaf Cakes without Butter

  • To prepare the Mini yogurt loaf cakes without butter first separate the yolks from the whites.

  • With the electric whisk, whip the egg whites to very stiff peaks in a very clean bowl.

  • In a second bowl, place the yolks, Greek yogurt, and milk and start to beat with the electric whisk.

    Add the sugar and beat for a few minutes.

  • Lastly, incorporate the sifted flour with the baking powder with the electric whisk running.

    You should obtain a smooth and rather creamy mixture that you can flavor with vanilla extract or lemon or orange zest as you desire.

  • Preheat the oven to 329°F in static mode and in the meantime incorporate the previously whipped egg whites into the yogurt loaf cake mixture using a rubber spatula.

    Do this with gentle movements from bottom to top to prevent deflating the mixture.

  • Butter and flour the molds and fill them up to 3/4 with the mixture.

    Bake the Mini Greek Yogurt Loaf Cakes in the middle shelf of the oven for at least 35/40 minutes, then take them out and let them cool slightly before removing from the molds.

How to store the Yogurt Loaf Cakes without Butter

You can store them in a box or cake container outside the fridge for 3 or 4 days.

If you prefer, you can freeze them and then defrost at room temperature.

  • Can I use whole fruit yogurt?
