The lemon-gratinated cod fillets are a great alternative to the classic pan-fried cod fillets loved by the whole family, including the little ones. They can be prepared quickly and can be flavored in many ways, such as orange, lime, rosemary, or even with mixed herbs and paprika. You can use both fresh and frozen fillets. Ingredients
- 6 cod fillets
- 1 lemon (grated zest)
- 5 slices white sandwich bread
- 6 tablespoons extra virgin olive oil
- 1 clove garlic
- 5 sprigs thyme
- salt
- pepper

Instructions
Tear the bread slices roughly with your hands. Put them in the food processor and add the thyme and lemon zest after washing and drying them.
Peel the garlic and remove the central sprout if present. Add it to the processor with a pinch of salt and pepper, then blend for 20-30 seconds.
Place the cod fillets on a baking tray lined with parchment paper. Season the fillets with salt and pepper.
Cover them with the breading. Oil the fillets well, one tablespoon of oil each.
Cook in a fan oven at 375°F for 20 minutes or in an air fryer at the same temperature and time.
Remove from the oven and serve immediately.

Tips
Keep them in the fridge for 1 day in a closed container. They can also be frozen already cooked and reheated straight from the freezer in a hot oven.
It’s possible to freeze them raw with the breading only if the fish is fresh.
To flavor the breading, you can also use other fresh or dried herbs, such as marjoram, oregano, savory, basil. Besides lemon, you can choose orange or lime.
