Ingredients for the Ultra-soft Air Fryer Meatballs
- 1.65 lbs mixed minced meat
- 3 eggs (xl size)
- 4 slices whole wheat bread
- 4 tbsps grated Grana Padano
- 3 tbsps breadcrumbs
- 1 bunch fresh parsley (plenty)
- 3 cloves red garlic
- 2 tbsps extra virgin olive oil
- 0.1 oz fine salt
- black peppercorns (plenty and freshly ground)
- 0.42 cup milk (to soak the bread)

Preparation (super easy!) of the ultra-soft air fryer meatballs!
In a bowl, pour the milk and soak the whole wheat bread, let it sit for a few minutes.
In the chopper, add parsley (washed and dried), garlic (cleaned of waste), eggs, salt, oil, breadcrumbs, freshly ground pepper, cheese, and the soaked bread (pour in the remaining milk from the bowl as well), and chop thoroughly until you get a semi-liquid but homogeneous mixture.
In the bowl (where you previously soaked the bread), add the mixed minced meat, wear gloves, pour the mixture from the chopper onto the meat and start kneading with your hands until you get a homogeneous and soft mixture.
Prepare the air fryer basket with the silicone pan inside (I recommend having two on hand), still wearing gloves, form the meatballs (about the size of a ping pong ball) and place them in the silicone pan (32 pieces are made, I placed 16 in each pan).
Insert the basket in the air fryer with the first tray of meatballs (same procedure for both trays), turn on, set to 190°C (374°F) and cook WITHOUT preheating for 20 minutes, stirring with a spoon halfway through cooking, once cooked, you can enjoy them either hot or cold, with their crispy crust on the outside and soft inside will win you over at the first bite!
TIPS
You can serve the meatballs hot simply on their own, or cold with sauces like mayonnaise or barbecue sauce or sweet and sour sauce or tzatziki sauce.
