Preparation of the rolled omelette
Preparing the stuffed rolled omelette is very simple. Break the whole eggs into a large bowl. Grate the zest of a well-washed lemon, being careful not to grate the white part. This step is optional. Salt, pepper, and beat the mixture quickly with a fork.
Take the non-stick pan and pour a drizzle of oil. Place it on the heat and pour in the mixture. Cook over medium heat, and when the omelette detaches easily from the oven, slide it onto a serving plate. Put it back in the pan on the less cooked side.
