Ingredients

  • 1.1 lbs eggplants
  • 14 oz tomatoes
  • to taste extra virgin olive oil
  • to taste salt
  • 9 oz buffalo mozzarella
  • to taste basil

How to make Baked Caprese Eggplants

  • Start by slicing the eggplants, then place them on the grill and grill them on both sides, season with salt to taste.

  • Meanwhile, also slice the mozzarella and tomatoes, then take a baking dish (whether rectangular or circular doesn’t matter) and oil it well.

  • Start by arranging the eggplant slices, then the tomato slices, and finally the mozzarella slices, alternating them. Drizzle with some oil and bake at 350°F for about 15 minutes.

  • Take out of the oven and serve, enjoy your meal!

Storage and variations of Baked Caprese Eggplants

They can be stored in the refrigerator, inside an airtight container, for up to two days. If you prefer, the eggplants can also be fried. Caprese eggplants can be served accompanied by a teaspoon of basil pesto.
