Mantis shrimp, also known as canocchie, are crustaceans that live on sandy bottoms. They have a pearly white-grayish coloration, and their meat is very prized. They are delicious cooked with pasta or boiled and seasoned with oil and lemon. For a very easy second course, I cooked the Gratinated Mantis Shrimp with a tasty breadcrumb coating and baked in the oven in just a few minutes… delicious!

Ingredients
- 15 mantis shrimp (or canocchie)
- 1/4 cup breadcrumbs
- 1 tbsp parsley
- 1 oz salted capers
- 2 tbsp extra virgin olive oil
- 1 tbsp dry white wine
- 1 clove garlic
- 1 tsp lemon zest (grated)
- 2 sun-dried tomatoes in oil

Steps
Rinse the mantis shrimp under running water, use scissors to remove the appendages on the back of the crustaceans, the legs, and the ends on the right and left. To stuff them, make a cut along the shell.
Preheat the oven to 392°F. Pour a drizzle of oil into the baking dish and place the mantis shrimp side by side. Put the breadcrumbs, parsley, garlic (core removed), sun-dried tomatoes, capers, and remaining oil in the chopper. Chop everything and stuff the mantis shrimp with a teaspoon.
Sprinkle with a bit of grated lemon zest. Pour the white wine, oil, and place in the oven. Cook for about 20 minutes lowering the temperature to 374°F if they start to brown too much. Serve them very hot.
