- 2 eggplants (large)
- 1.5 cups mozzarella
- 0.5 cup breadcrumbs

Steps for Preparing Eggplant Sandwiches
Wash the eggplants and cut them into lengthwise slices. Sprinkle breadcrumbs on a baking tray lined with parchment paper. Sprinkle with more breadcrumbs, salt, and a drizzle of oil, and bake until golden at 350°F, static.
In a bowl, mix the tomato sauce with salt, oil, and oregano. Place 4 eggplant slices on the tray. Add tomato sauce to each slice. Enrich with thinly sliced mozzarella and cover with another 4 eggplant slices. Repeat these layers making 3 or 4 stacks.
Finish with sauce and mozzarella. Bake in a static oven at 350°F, just long enough to melt the cheese. Fragrance with fresh basil and serve hot and stringy or warm.
Storage
You can store for two or three days in the fridge.
