Ingredients for dough
- 4 cups all-purpose flour
- 3/4 cup sugar
- 1 Egg
- 7 tbsps butter (Softened)
- 2/3 cup Milk
- 1 Lemon zest (Grated)
- 1 packet vanillin
- 1 packet baking powder
- 1 pinch Saffron
- to taste Jam (Or Nutella)
- 1/4 cup Water (Or limoncello)
- 1 lemon juice
- 1 pinch Saffron
- to taste granulated sugar (For garnishing)
Steps
Prepare the dough by placing all the ingredients in the stand mixer. Add the sugar, egg. Mix and add the softened butter, flour, milk, grated lemon zest, vanillin packet, saffron, baking powder. Knead and finish the dough on the pastry board.
Cut the dough into small pieces and make roughly equal balls. You should get about thirty balls.
Hollow out the center of each ball and add a teaspoon of jam. Close and shape into a lemon.
Arrange the lemon-shaped cookies on a baking tray lined with parchment paper. Bake them at 340°F for 15 minutes.
Prepare a soak with water or limoncello, lemon juice, and saffron. Lightly soak the lemon cookies after baking and cooling slightly. Roll them one by one in sugar,
Arrange them on a tray and if you have lemon leaves at your disposal, use them to garnish the plate
Enjoy the lemon cookies immediately, or if you wish to keep them, store them in an airtight container. They can last up to a week (if they last that long)😋😜
