PUFF PASTRY PIE with Potatoes, Salmon, and Onion

Puff pastry pie with potatoes, salmon, and red onion, which allowed me to use a piece of fresh salmon that was left unused and other leftover ingredients.

This pie of mine is with fresh salmon pieces, some onion rings, and potato slices that turn golden and are delicious!

  • 1 package puff pastry (rectangular)
  • 10.5 oz salmon (fresh)
  • 10.5 oz potatoes
  • 8.8 oz robiola (or ricotta or creamy cheese)
  • 1 plain yogurt
  • 1 red onion
  • 2 eggs
  • 2 tbsps extra virgin olive oil
  • to taste fennel
  • to taste salt
  • to taste pepper

FOR PREPARING THE PUFF PASTRY PIE WITH POTATOES, SALMON, AND ONION

  • First, after washing the potatoes, I slice them and blanch them for 2/3 minutes in salted boiling water.

    While the potatoes are softening, I put a little extra virgin olive oil in a pan and sauté the sliced red onion, also adding a bit of water to complete the cooking.

    I dice the salmon, add it to the pan, and as soon as it changes color, I turn off the heat and proceed to assemble the puff pastry pie!

    In a bowl, I mix the yogurt with the robiola, seasoning with salt and pepper, and also adding the eggs, always mixing the mixture well.

    I unroll the puff pastry, placing it in a mold (bottom and edges), keeping the baking paper from the package.

    I prick the bottom of the puff pastry and pour the soft robiola and yogurt mixture on top, leveling it well.

    Now I cover the cheese cream with the soft potatoes, the salmon squares, and thin slices of red onion.

    I also added some sprigs of fennel, a pinch of salt, and pepper.

    Now it’s time to bake at 350°F (180°C) in static mode for about 35/40 minutes or depending on the characteristics of our home oven.

    Once cooking is complete, I turn off and let it cool completely.

1) Besides fennel, we can also add some fresh thyme, which goes great with fish!

2) If we have some smoked salmon, we can dice it and mix it with the cheese filling. What do you think, could it work as an alternative???

3) Instead of robiola, we can use spreadable creamy cheese like Exquisa, Philadelphia….
