Ingredients for the Savory Tart with Red Onions

  • 4 1/4 cups shortcrust pastry
  • 2 1/4 cups red onions (also Tropea)
  • 5 oz cooked ham
  • 5 oz scamorza cheese (sliced)
  • as needed olives (green or black as desired)
  • 2 pinches salt
  • 2 tablespoons extra virgin olive oil

Preparation Savory Tart with Red Onions

  • To prepare the Savory Tart with Red Onions, first prepare the shortcrust pastry following my recipe and let it rest in the fridge.

  • Meanwhile, peel and slice the red onion thinly, and let it soften in a pan with a drizzle of extra virgin olive oil.

  • Once it is soft, salt it and, if you like, season with dried oregano and let it cool.

  • After the resting time for the shortcrust pastry, roll it between 2 sheets of parchment paper to a thickness of 1/8 inch.

    Line a 22/24 cm (8.5/9.5 inch) tart mold with the dough and knead the scraps to form the strips.

  • Preheat the oven to 375°F in static mode.

    Spread half of the now-cold onions over the shortcrust, cover with slices of ham, and place the scamorza on top.

  • Make a second layer of red onions, more ham, and scamorza, then cut the strips and cover the Savory Tart with Red Onions, making them adhere well to the edges.

  • In the middle of each strip (where the holes have formed), place a pitted olive (you can use one green and one black, or all black or all green).

  • Bake on the center rack of the oven and cook the Savory Tart with Red Onions for at least 35 minutes.

  • Once baked, when the Savory Tart with Red Onions is golden on top, remove it from the oven and let it rest for a few minutes.
