Ingredients
- 1 lb 2 oz chicken breast (sliced)
- 1 lb 2 oz frozen mushrooms (or fresh)
- 2 potatoes (medium)
- 1 clove garlic
- 2 tbsp butter
- 2 tbsp extra virgin olive oil
- 3.4 fl oz dry white wine
- 2 1/2 tbsp flour
- 3/4 tsp fine salt
- 1 pinch black pepper

Steps
In a nonstick skillet pour 5 tablespoons of oil, add the garlic clove (to be removed later) and as soon as it sizzles add the mushrooms still frozen. Stir and as soon as they begin to take color add the potatoes cut into cubes. Let brown, stirring occasionally, pour in half of the white wine, salt, pepper and cook for about 15 minutes, then keep warm.
Place the chicken breast slices on a cutting board and pound them with a meat mallet, then dredge in flour. In a sufficiently large pan melt the butter, lay the slices in, season with salt and let them take a nice color and crust on both sides.
Moisten with the remaining wine and let it evaporate. Pour the mushrooms and potatoes over the chicken slices, mix and leave for another 10 minutes so the flavors combine. Turn off the heat, pepper and check seasoning. Serve the Chicken Breast with Mushrooms and Potatoes very hot.
