Chocolate Plumcake with Whole Pears

I was watching TV when pastry chef Franco Aliberti presented his surprise plumcake. It was love at first sight, and… done and dusted! I had the ingredients, which are those we usually have at home, so I immediately got to work making some small variations. At first glance, you can see that the pears are not in pieces like in classic cakes but are inserted whole with the stem sticking out, and when sliced, the effect is very scenic. Ingredients

  • 3 Abate pears (small)
  • 3 eggs
  • 180 g Sugar
  • 1/4 cup corn oil
  • 2/3 cup plain yogurt
  • 1/4 cup milk
  • 1 3/4 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 packet baking powder
  • 2 g powdered sugar

Steps

  • Place the pears in a pot with cold water and cook with the skin on for 20 minutes. Preheat the oven to 356 degrees Fahrenheit static mode. Beat the whole eggs with the sugar and gently add the oil, yogurt, and milk.

  • In a bowl, mix the dry ingredients, flour, unsweetened cocoa, and baking powder. Sift them and pour them into the batter, mixing with the spatula from bottom to top. Pour the batter into the greased and floured plumcake mold.

  • Place the warm pears cutting a bit off the base to make them stand upright and bake. Cook for 35-40 minutes then leave the plumcake for another 5 minutes in the oven with the door ajar. Let the chocolate plumcake with whole pears cool, sprinkle with powdered sugar, and serve.
