It is prepared in two steps, because we first make it in the pan and then put it in the oven. But it is really a simple procedure.
I used farm eggs that were gifted to me, oh yes… I know, I am very lucky, my neighbor gifts me fresh eggs from her father’s chickens every now and then, and today they arrived just in time.

Ingredients for the Baked Fennel Frittata
- 3 fennel bulbs
- 6 eggs (5 if they are large)
- 3 tablespoons Parmesan
- salt
- pepper
- Half glass water

Steps for the Baked Fennel Frittata
Clean the fennel by removing the hard outer part, slice them thinly, and wash them.
Place the fennel in the frying pan with a drizzle of oil, a bit of water, sprinkle with salt and pepper, and cook for about 10-15 minutes over medium heat.
(Cooking time may vary depending on the size of the pieces).
If needed, add a little water during cooking.
In a bowl, beat the eggs with the Parmesan, a bit of salt, and pepper.
Add the fennel mixture to the egg mixture and mix well.
Line a 9.5-inch baking pan with parchment paper.
Spread all the fennel evenly covering the entire bottom of the pan.
Pour the beaten egg mixture over it.
Level it well and bake in a fan-assisted oven at 356°F for 20 minutes.
(If you don’t have parchment paper, pour 2 tablespoons of olive oil in a baking pan and spread it evenly)
Serve the fennel frittata warm or at room temperature, it is delicious, my word!
No need to flip the frittata. It cooks well on both sides.
When it’s ready, remove it from the mold with the help of a large plate.
Serve immediately. It should be eaten hot, or warm it is delicious.

If you want to make the dish lighter and less caloric, you can use only egg whites, eliminating the yolks completely.
If you want to make the fennel frittata even lighter, boil the cloves for 5 minutes or steam them instead of sautéing.

Tips
It will be useful to know that washing eggs removes their protective coating, making the shell porous and more susceptible to bacterial attack.
Therefore, if the shell is dirty you can clean it dry [for example with a sheet of kitchen paper] before storage, and only at the time of use, you can clean it with a damp sheet of kitchen paper.
