Ingredients for PISTACHIO PANNA COTTA
- 7 g gelatin sheets
- 1 cup heavy cream
- 3 tbsp sugar
- 3.5 oz pistachio cream
- as needed whipped cream
- as needed chopped pistachios

FOR THE PREPARATION OF PISTACHIO PANNA COTTA
First, I put the gelatin in cold water to rehydrate and soften.
In a saucepan, I put the cream with the sugar.
On low heat, I warm up the liquid without bringing it to a boil.
Now I turn off the heat, squeeze the gelatin very well and immerse it in the hot liquid so that it quickly melts into the cream and sugar mixture.
In a small bowl or cup, I put the pistachio cream and add a little ladle of still warm liquid, and with a spoon, I blend the two consistencies well.
I add the rest of the cream and distribute to set the pistachio panna cotta in appropriate cupcake liners or ceramic ramekins.
Cover with plastic wrap and place in the refrigerator to rest for at least 4 hours.
When ready to serve, I whip a few tablespoons of cream (or quickly use spray cream) to put on the spoon desserts unmolded and placed on individual plates.
To complete, I add chopped pistachios and immediately serve my guests!
