- 3 1/2 cups all-purpose flour
- 7 oz butter (cold)
- 3/4 cup powdered sugar
- 2 eggs
- lemon zest
- 1/2 teaspoon baking powder
- 3/4 cup milk
- 3 oz egg yolks (about 3)
- 1/3 cup sugar
- 3 tablespoons flour
- strawberries (fresh as needed)
- strawberry jam (as needed)
- powdered sugar (for dusting)

LET’S PREPARE THE CREAM
To make the firm cream without bimby, you can follow this recipe
WITH BIMBY: Put all the ingredients in the bowl, 7 minutes at 194°F, speed. 4
WITH BIMBY: put sugar and lemon zest in the bowl for 15 sec. speed. 10 then add all other ingredients for 20 sec. speed 4.
If you don’t have a bimby, you can use a mixer or proceed with the old method, crumble flour and butter together, then make a well and add other ingredients. Let the dough rest for at least 30 minutes in the fridge. Roll out the dough in a greased and floured tart pan, leave some for the strips, spread strawberry jam on the bottom, and cover with cream, add some chopped strawberries, then make the strips. Bake at 356°F for about 35/40 minutes, but adjust to your oven. Remove from oven and dust with powdered sugar. Let it cool completely before enjoying.
