Ingredients for the Cake

  • 4 eggs (room temperature)
  • 140 g sugar (or same amount of erythritol)
  • 140 ml milk (or plant-based)
  • 40 ml vegetable oil
  • 330 g all-purpose flour
  • 1 packet baking powder
  • 1 pinch salt
  • Half lemon (grated)
  • as needed powdered sugar
  • 1 piece butter (for the mold)
  • as needed all-purpose flour (for the mold)

Steps for the Simple and Quick Cake

  • In a large bowl, beat the eggs with sugar, fine salt, and the grated zest of half an organic lemon until you get a light, frothy mixture.

    (The eggs should be at room temperature).

    Add the sunflower oil and the room temperature milk while continuing to mix with the electric whisk.

    Set aside the electric whisk and take a spatula.

    Gently add the pre-sifted flour and baking powder.

    Mix with the spatula from bottom to top.

  • Butter and flour a 9.5-inch pan and pour the mixture into it.

    Bake in a preheated static oven at 356°F, and let it cook for about 30 minutes.

    Remove from oven, let cool, and sprinkle with powdered sugar.

Advice

Always preheat the oven to 356°F whether static or fan-assisted.

For baking, if using a static oven, always stay at 356°F. If using a fan-assisted oven, lower the temperature to 338°F and reduce the baking time by 10 minutes.


Never open the oven before 25 minutes of baking to avoid deflating the cake.


For all baking, considering that your oven’s heat might vary, always do the toothpick test before taking it out of the oven.


The toothpick test involves inserting a toothpick into the batter. After removing it, if it comes out dry, then the cake is ready.

It keeps for 3/4 days, obviously stored under a cake dome.
