Ingredients for Preparing the Savory Puff Pastry Pie
- 2 rolls puff pastry
- 12 oz ricotta
- 1.75 oz taggiasca olives
- 1 oz sun-dried tomatoes in oil
- 2 tbsps grated Parmesan cheese
- 1 sprig chopped parsley
- 1 egg (for brushing)
- 2 tsps sesame seeds (and poppy seeds)
Preparation of Savory Puff Pastry Pie
To prepare the savory puff pastry pie, first drain the ricotta to remove as much whey as possible.
Meanwhile, using an immersion blender or food processor, chop the drained sun-dried tomatoes and the taggiasca olives together.
In a bowl, mix them with the drained ricotta, add the grated cheese, and taste for salt.
If needed, add a little more and enrich with fresh chopped parsley.
Preheat the oven to 350°F in static mode, and in the meantime, unroll one puff pastry sheet (leaving its parchment paper underneath).
Use a cup or a glass to mark the center, and with a wooden toothpick, mark the puff pastry without piercing it, dividing it into 8 parts.
Then stuff it by distributing the filling in the center and between the marks with plenty of filling.
Cover with the second puff pastry roll and flatten with your hands along the previously made marks to release the air.
Mark again both the center and between the filling to form a flower.
Seal the edges well with the back of a fork, creating marks that will prevent the filling from leaking during baking.
Brush with beaten egg and sprinkle with sesame and poppy seeds, then place it on a baking tray.
Bake on the center rack of the oven and allow it to cook.
Bake the savory puff pastry pie on the center rack of the oven for at least 25/30 minutes, then remove from the oven and let it rest for 5 minutes before serving.

How to Store the Savory Puff Pastry Pie
You can store it in the refrigerator for 2 days.
If you prefer, you can also freeze it and then let it thaw at room temperature.
