- 0.28 oz fresh yeast
- 5.4 cups flour (13% protein)
- 1.6 cups water
- 2.8 tbsps extra virgin olive oil

- 17.6 oz tomato sauce

Steps for preparing the pizza-style bread crown
Prepare the dough: in the stand mixer, place the crumbled fresh yeast. Add water and oil and start kneading. Add the salt. Knead until you have a smooth and elastic dough. Place it in a bowl covered with a cloth and let it rise until at least doubled. A couple of hours should suffice.
Mix the tomato sauce with oil, salt, chili, and oregano. Mix well. Deflate the dough and roll it out with a rolling pin into a long rectangle. Along the length, make a couple of layers of tomato sauce and cheese slices, more tomato and cheese, but only on half the height.
Make cuts (like fringes) on the remaining plain dough. Roll from the filled side. After forming a long loaf, close it into a ring. Brush with extra virgin olive oil and let it rise for another hour. Bake in a preheated oven at 356°F, static, for about 30 minutes. Serve with gooey cheese.
Storage
You can store it for two or three days in the refrigerator and reheat it in the oven.
