Radish Appetizers
- 4 radishes
- to taste mustard
- to taste apple cider vinegar (or white wine vinegar)
- to taste maple syrup (or honey for vegetarians)

- 1 Knife smooth blade for vegetables
Radish Appetizers
Clean the radishes
With a smooth blade knife, remove the leaves and thin root from the radishes, then wash them very well.
Prepare the dressing
In a small bowl, mix the ingredients together. Adjust the consistency to create a creamy dressing. I did not add salt.
Compose
Cut the radishes in half and pour a little sauce over them.
Garnish with small edible flowers, dried petals, parsley, or chives.

VEGAN Versions
– great for vegetable CRUDITÉS
– STUFFED: slightly hollow out the center of each radish half and fill with vegan pesto
– with CROSTINI: spread some hummus or a sauce on toasted bread slices, and top with radish slices
– delicious paired with carrots, fava beans, and cherry tomatoes
VEGETARIAN Versions
– STUFFED: slightly hollow out the center of each radish half and fill with a mixture of cream cheese, fresh herbs (basil, mint, parsley), and/or chopped olives. Season with oil and salt to taste.
– BRUSCHETTA: spread pesto or a vegetarian sauce on bread and decorate with radish slices
FISH Versions
– canapés: place radish pieces on tuna sauce or a cream seasoned with anchovy paste
– great addition to homemade sushi
– beautiful on a salmon carpaccio
OMNIVORE Versions
– great for decorating a charcuterie carpaccio
