Spring rolls are one of the most famous dishes of Chinese cuisine. Tasty, flavorful, and wrapped in a crispy fried pastry, spring rolls are truly irresistible.
Spring rolls are rolls made with filo pastry or wonton wrappers filled with various vegetables and then fried. There are numerous versions and variants, this is my recipe.
My version is vegetarian without meat, and I must say they were a great success. Stuffed with cabbage, onion, and carrots. But you can also add bean sprouts or chicken or pork to the vegetables.
It is possible to create a homemade version very similar to the original that will leave your guests speechless.
I was so satisfied that I also offered them to friends and relatives who appreciated them a lot, and I decided to propose the recipe to you as well, perfect also for parties and appetizers.

Ingredients for Spring Rolls
- 8 sheets filo pastry (8×8 inches)
- 300 g cabbage (or savoy cabbage)
- carrot (1 medium)
- 1 onion
- to taste soy sauce
- to taste peanut oil
- salt
- pepper
- 1 egg white (for brushing)
- to taste peanut oil

Steps for Spring Rolls
Clean, wash, and cut the vegetables into very thin strips.
Heat a pan similar to a wok (or even better if you have a wok) over high heat, then add the vegetable oil and onions.
Sauté for a couple of minutes, then add the carrots and cabbage. Season with salt and pepper.
Be cautious with the salt.
(If desired, you can use savoy cabbage and bean sprouts).
Add just a little soy sauce, but don’t overdo it, and stir-fry the vegetables for 5 minutes: they should be cooked but still crunchy.
Transfer the vegetables to a strainer to remove excess liquid, then spread them slightly with a fork to better preserve their color and crispiness.

Cut the filo pastry sheets in half to form squares 8×8 inches.
At this point, you can assemble the rolls: place one sheet at a time on a towel with one corner facing you and add a handful of filling on the lower half.
Fold the bottom corner up and roll without pressing to cover the filling.
Then fold the side corners towards the center.
Finally, roll the roll from the bottom up.
Do not press too hard or the filo pastry may break.
Seal the sheet by moistening the edges with a bit of egg white, you can use your fingers or a brush.
Proceed in this way to form all the rolls.
Now heat a deep pan again, then add plenty of vegetable oil.
(Bring to a temperature of 356°F).
When the oil is at temperature, slightly lower the heat and fry a few rolls at a time, turning them on both sides.
When they are golden brown on both sides, drain the rolls and place them on kitchen paper to absorb the excess oil.
Serve your spring rolls while still hot with spicy or sweet and sour sauce.

Advice
Baking:
Take a baking dish and grease it with vegetable oil, place the spring rolls inside one by one, and then brush them with oil. (Use a brush to grease the baking dish)

When the spring rolls are golden brown, take them out of the oven and place them on a serving plate with some absorbent paper underneath”.
Air frying:
Now put the rolls in the basket of your hot air fryer and spray them with vegetable oil.
Cook at 374°F for about 12 minutes, turning them halfway through cooking.

The filo pastry sheets for rolls can be easily found online or in ethnic grocery stores, I also found them in supermarket refrigerator sections.

Can’t find filo pastry?
Prepare this batter: mix in a bowl 1 cup (125 g) of all-purpose flour, 1/2 cup (70 g) of cornstarch, 1 1/2 cups (350 g) of water, and 2 pinches of salt until you get a lump-free mixture.
Let it rest for at least half an hour, then make very thin crepes by cooking them in a non-stick pan greased with vegetable oil; they should be almost transparent.
Then proceed with the filling as per recipe!
