I admit, I was a bit skeptical about making desserts in the air fryer. With this banana bread (banana bread), I had to absolutely change my mind: I achieved a sweet, soft, moist and perfectly cooked even at the bottom, in little time and with energy savings. The only precaution is to bake the sweets at a temperature around 284°F-320°F (to cook it well inside) and in small containers about 8 inches in diameter if your basket is at least 8.7 inches. Otherwise, if you have a smaller basket, use a 7-inch mold to facilitate air circulation.

This light banana bread, very soft and fluffy, just like in the home oven. It is ideal for a healthy breakfast or snack, it is a light dessert with a low glycemic index, as it is made with whole spelt flour and whole cane sugar and honey.

The advantages of cooking in an air fryer are healthy and many: you don’t have to preheat the oven, the cooking is more quick, economical, and healthy (you need very few fats), not many pots and dishes get dirty, it doesn’t produce smoke and odors

I should point out that the temperature and cooking times are generally indicative, because it largely depends on your type of air fryer (mine is a Philips), however, the recipes on my Blog are all previously and strictly tested by me (so more than tested). In any case, I still recommend you to check the cooking occasionally, to better adapt times and temperature to your air fryer.

Ingredients

  • 1 cup whole spelt flour (sifted, or your preferred flour)
  • 3 bananas (ripe, the third is used to garnish the surface of the dessert)
  • 5 tbsp butter (soft, at room temperature)
  • 3.5 oz muscovado sugar (or whole cane sugar)
  • 1 egg (whole)
  • 2.5 tbsp acacia honey (about 2 tablespoons)
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 pinch fine salt
  • to taste vanilla powdered sugar (to garnish the dessert)

  • Mold square for air fryer (7 or 8.7 inches)
  • Air fryer paper with holes
  • Blender Braun with various accessories, 1000W power
  • Grills Reusable non-stick grills, heat resistant.

Steps

You can work all the ingredients by hand; I used an immersion blender to speed up the process. Add the soft butter and brown sugar to the cup and blend for 1 minute, obtaining a cream, then add the vanilla extract, cinnamon, a whole egg, a pinch of salt, and honey and blend for about 3 minutes.

  • Finally, also add two ripe bananas to the dough (it is important that they are ripe, as this gives the banana bread a soft and moist texture), the sifted spelt flour, and baking powder, and blend for another 2 minutes, until you have a creamy and lump-free dough. Preheat the air fryer for 2 minutes at 284°F.

  • Butter the cake mold and place a sheet of holed air fryer paper on top (to unmold the cake more easily), pour the dough into the mold, and garnish the surface with a sliced banana.

    Place the mold in the air fryer basket and set the temperature to 284°F for 20 minutes.

  • Then leave the mold in the turned-off air fryer for another 20 minutes.

  • Once the cake has cooled, unmold it and sprinkle it with powdered sugar, then serve it in slices for breakfast, snack, or snack.

    It stays soft for about 2-3 days wrapped in aluminum foil, and you can also freeze it cooked and sliced.

    If you don’t have an air fryer, you can easily prepare the banana bread in the oven in static mode at 356°F for about 30 minutes
