Mini ground meat skewers with bacon. They are a simple and flavorful main course, perfect for a quick family or friends dinner.
Today I asked my trusted butcher to grind the meat for me, selecting a mix of beef and pork to be ground on the spot.
Then, there was some fantastic bacon on display, and I had them slice it up; I already had clear ideas for dinner.
At the greengrocer’s, I picked up some salad to accompany everything.
The first thing to do is make the meatballs, which we’ll prepare in the classic way: mixing all the ingredients to form a workable mixture with the hands.
I used the ingredients typically found in meatballs: ground meat, egg, breadcrumbs, grated cheese, parsley, salt, and pepper.
Once the meatballs are ready, we will shape them into elongated forms to create ‘sausages,’ wrap them with bacon slices, and then insert skewers to secure everything: nothing easier!
Afterwards, we’ll just need to cook our mini ground meat skewers in the oven with a drizzle of oil and make them well browned on all sides.
These meat skewers are perfect with a fresh green salad, a tomato salad, or with baked or boiled potatoes. In the cold season, mashed potatoes will be perfect.

Ingredients for Mini Ground Meat Skewers
- 14 oz mixed ground meat (beef pork)
- as needed breadcrumbs
- 1 egg
- 3.5 oz bacon (sliced, pancetta also works)
- as needed salt
- pepper
- as needed garlic powder
- herbs (to taste)
- 1.75 oz Parmesan
- Half glass dry white wine

Steps for Mini Ground Meat Skewers
In a sufficiently large bowl, mix the ground meat with salt, pepper, and nutmeg.
Then add the Parmesan to taste; you can season with some spices, such as garlic powder and aromatic herbs like rosemary, parsley, or thyme.
Combine all ingredients, then also add the egg and breadcrumbs.
Mix well with your hands until you get a homogeneous, fairly soft mixture similar to that of meatballs.
If it seems too soft, add a bit more breadcrumbs.
Divide the mixture into 8 parts and, using your hands, form elongated meatballs.
Finally, wrap each meatball with bacon slices.
Secure with skewers to hold everything together.
Line a baking pan with parchment paper and place the mini ground meat skewers on it, then bake in a static oven at 356°F for about 15 minutes, then raise the oven to 392°F and continue cooking for another 5 minutes.
“Turn them halfway through cooking, and pour white wine over the skewers, letting them cook for about another 10 minutes, without letting them dry out too much.”

Remove from the oven and serve hot with seasonal vegetables.

Tips
You can also cook the ground meat skewers without wrapping them in bacon.
The recipe is very quick and can also be prepared in advance: just store the raw skewers in the fridge, well-covered, and cook them in the oven or pan just before serving, along with a quick side dish.
Once cooked, if there are leftovers, we recommend consuming the skewers by the next day, stored in the fridge in a food container.
