STORAGE

The frittata is good warm (just made), or even cold for a picnic or as an appetizer (cut into squares). Store in the refrigerator for 2-3 days after preparation.

How can you eat borage?

The borage leaves are great for making meatballs, a farinata-style omelet, fresh pasta filling, risotto paired with lemon, or fried for a tasty aperitif snack.

The flowers are used to decorate dishes and, together with the more tender leaves, can be eaten raw in salads. Or they can be dried to use later in teas.
