Zeppole di San Giuseppe with egg whites soft, puffy and light their delicacy will conquer everyone, the famous dessert prepared for Father’s Day along with Bignè di San Giuseppe.
It is a lighter variant of the classic fried zeppole. The dough is still choux pastry but instead of egg yolks, you use egg whites. Making these zeppole even more delicious and unique is the cream made with egg whites, which is soft and velvety.
I have used egg whites several times in recipes, such as for chocolate chip and egg white cake or a tart with egg whites, and I have been wanting to make zeppole for a while, and I must say it’s a fantastic recipe!
However, if you’re more of a traditionalist, you can always follow the recipe for classic fried zeppole or air fryer zeppole or the classic bignè, but I recommend trying this version, and I am sure you will be amazed. Let’s see what we need to make Zeppole di San Giuseppe with egg whites soft, puffy and light, their delicacy will conquer everyone.

- 1 Piping bag
Steps
LET’S PREPARE THE ZEPPOLE
To make the zeppole, you can follow this recipe, you need to add the egg whites unwhipped instead of the yolks.
Heat the milk with the flavoring of your choice. In a saucepan, place the egg whites and sugar and work quickly, add the flour, and finally the hot milk a little at a time, stir, and thicken on the stove.
BIMBY METHOD Put the lemon zest with the sugar in the bowl and pulverize for 10 seconds, speed 8.
Add the other ingredients for 7 minutes at 194°F speed 4. Let the cream cool covered with plastic wrap.
Put the cream in a piping bag and fill the zeppole. Since I like them creamy, I cut them in half and filled them, then I put a bit of cream in the hole. Put a little cocoa powder in a small bowl and add water until you get a fairly dense consistency. Decorate the zeppole with a fork and dust with powdered sugar.
READ THE TIPS BELOW THEY MIGHT BE USEFUL FOR A GOOD OUTCOME OF THE RECIPE
THE CHOCOLATE CREAM, PREPARE IT LAST OTHERWISE IT WILL SOLIDIFY, NEVER OPEN THE OVEN DURING THE BAKING OF THE ZEPPOLE … THE TEMPERATURE IS CRUCIAL 392°F FOR THE FIRST 10 MINUTES THEN 356°F FOR ANOTHER 25 MINUTES IF YOU USE THE FAN 356°F FOR 10 MINUTES AND THEN 320°F FOR ANOTHER 25 MINUTES. THE TEXTURE WILL BE SLIGHTLY CRUNCHIER THAN THE CLASSIC ZEPPOLE BUT CONSIDER THAT ONCE FILLED THEY WILL SOFTEN. IF THE DOUGH TURNS OUT TOO DENSE THEN YOU NEED TO ADD ANOTHER EGG WHITE THIS CAN DEPEND ON THE SIZE AND WEIGHT OF THE EGGS
