HONEY TOMINI with seeds, zucchini, and mixed cherry tomatoes

A unique dish, the recipe for honey tomini with seeds, zucchini, and mixed cherry tomatoes which for me is a great dinner solution!

The recipe was in an issue of Cucina Moderna and we can vary it using seasonal vegetables and using burrata, Greek feta, or a slice of provola or maybe smoked scamorza instead of tomino!

The tomino is a cheese that can be made with goat’s milk, cow’s milk, or mixed milk. It is special because when adequately heated, it becomes almost creamy, and once the thin crust is cut, it spreads and wraps the vegetables or other ingredients with deliciousness.

Ingredients HONEY TOMINI with seeds, zucchini, and mixed cherry tomatoes

  • 4 tomini
  • 0.7 oz mixed seeds
  • 1.76 lbs mixed cherry tomatoes
  • 2 cups zucchini
  • 2 cloves garlic
  • 3 tbsp wildflower honey
  • to taste thyme
  • to taste salt
  • to taste parsley
  • to taste pepper

FOR THE PREPARATION OF HONEY TOMINI with seeds, zucchini, and mixed cherry tomatoes

  • with a food brush, I brush HONEY on the tomini on one side and sprinkle with mixed seeds, thyme, parsley, and pepper.

    I wash and cut the mixed cherry tomatoes into wedges

  • I trim the zucchini, wash them and cut them in half lengthwise into small sticks, possibly all the same size.

    I place the freshly cut vegetables in a baking tray, adding the crushed garlic cloves and a bit of the aromatic herbs, always seasoning with salt and pepper.

  • I pour some tablespoons of extra virgin olive oil and bake in a preheated oven at 392°F for about 20 minutes, stirring the vegetables after a few minutes of cooking.

    When the vegetables are tender and start to color, I add the tomini cheeses and continue cooking the vegetable side dish for another 5/6 minutes or until the tomini are soft, thus melted inside!

    I take the baking tray out of the oven and serve it immediately.
