  • First, prepare the coffee and set it aside. Now prepare the cream. Put the yolks in a saucepan with the sugar and start pasteurizing them in a water bath over low heat, constantly stirring until the thermometer reaches 176°F (80°C). Once pasteurized, blend them with the electric whisk, they should be nice and fluffy, then pour them over the mascarpone and continue to whisk, you will get a smooth and velvety cream. Now assemble the dessert, soak the ladyfingers in the coffee and arrange them in a baking dish, cover them with a layer of cream, and then dust with cocoa, make a second layer and finish with dusting with cocoa and then enjoy this marvel. If you like, you can add whipped cream to the cream.
