- 1 fennel
- 20 shrimp (roughly, even 30 eh eh)
- 1 bunch arugula
- 1 oz parmesan cheese (in slices or parmesan or RASPADURA)
- to taste extra virgin olive oil
- 1 clove lemon (just juice)
- to taste salt
- to taste pepper
- to taste pink peppercorns

FOR THE PREPARATION OF THE QUICK SHRIMP ARUGULA FENNEL SALAD RECIPE
first I clean by removing the shell and intestinal vein from the shrimp and rinse them well under running water.
I cook the shellfish in boiling water, for 2 minutes, and as they change color they are ready to be drained and cooled on a colander.
I slice with the mandoline or with a sharp knife into thin slices the fennel cleaned of the harder outer parts and well washed.
In a bowl, I put the sliced fennel, the cooked and cooled shrimp, a handful of arugula washed, dried, and coarsely broken with the fingers.
I also add the cheese flakes and for me, raspadura is the optimal choice.
I mix well and prepare the dressing by mixing EVO oil, lemon juice, salt, pepper, and if you want an extra kick, some pink peppercorns or false pepper.
