Baked Broccoli Meatballs are perfect for a finger food dinner, for an appetizer, or even to take to the office for a work break.
They are super light since they are not fried, the vegetables can be cooked in a pot or, as we did, steamed to make them less watery and thus become much more flavorful.
A perfect way to get even picky children to eat their vegetables, who will enjoy them and might leave you without any meatballs.

Ingredients for the Baked Broccoli Meatballs
- 21 oz broccoli
- 9 oz potatoes
- 1 egg (medium)
- 1.75 oz grated Grana Padano cheese
- 2 pinches salt
- 1 tbsp chopped parsley
- as needed breadcrumbs (to coat the meatballs)
- 2 tbsp extra virgin olive oil

Preparation of Baked Broccoli Meatballs
To prepare the baked broccoli meatballs, first clean the broccoli by removing the hard stem and outer leaves.
Break the florets, peel the potatoes and cut them into medium-large pieces.
In a pot with high sides, add 3 fingers of water and then place the steaming basket.
Place the vegetables in the basket, cover with the lid, and steam for at least 15 minutes from boiling.
Once cooked, place the vegetables in a bowl and let them cool slightly.
When the vegetables have cooled, mash them coarsely with a fork, add the breadcrumbs, grated cheese, and egg, and mix to combine.
Season the preparation for the Baked Broccoli Meatballs with fresh chopped parsley and salt, if you like you can add a little freshly ground black pepper.
Form the meatballs slightly larger than a walnut and coat them in the breadcrumbs flavored with herbs as desired.
Preheat the oven to 375°F in static mode and line a baking tray with damp and squeezed parchment paper.
Place the Baked Broccoli Meatballs well-spaced, drizzle with extra virgin olive oil, and bake them on the middle rack of the oven.
If they are small, they will be ready in 15 minutes, but if you prefer to make them larger, let them cook for another 5 minutes.
Remove from oven and serve them very hot, perhaps accompanied by your favorite sauce.

How to store Baked Broccoli Meatballs
You can store them in the refrigerator well-sealed in an airtight container for 2 days.
