Steps for preparing pasta with zucchini cream and cream cheese

  • Wash the zucchini, trim them and cut them into chunks. The smaller the pieces, the faster the cream will be ready. Coarsely chop an onion. Sauté it in a pan with a drizzle of oil.

  • Add the zucchini, salt, and pepper and cook for 7-8 minutes; they should remain slightly crunchy. Remove some zucchini from the pan. Blend the rest with the cream cheese.

  • Boil the pasta and drain it al dente, dress with the zucchini cream, adjust the salt, add the grated cheese, and flavor the pasta for a minute, adding a little cooking water if necessary. Serve with black pepper and the reserved zucchini.
