- 2.2 lbs potatoes
- 1 carrot
- 2 eggs
- 1.8 oz potato starch
- 3.5 oz grated parmesan
- 3.5 oz speck (or smoked bacon)
- 3.5 oz smoked cheese (sliced)
- 2 pinches salt
- to taste black pepper
- 1 pinch nutmeg

To prepare the Savory Crumbled Cake with Potatoes and Speck, first cook the potatoes with the skin on.
You can boil them or steam them until they are very tender inside.
Once the potatoes are cooked, pass them through the potato masher without removing the skin (you will see it stays attached inside the masher).
Let them cool slightly.
Preheat the oven to 392°F in static mode and in the meantime, combine in a bowl the potato puree, add the eggs, potato starch, and half of the grated parmesan.
Season with salt, pepper, and nutmeg and mix, you should obtain a fairly compact and non-sticky mixture.
Line a 9.5-inch springform pan with parchment paper then divide the obtained dough into 2 equal parts.
With one part, line the bottom of the pan and the sides using moistened hands.
Fill with slices of smoked cheese, speck, and 1 raw grated carrot.
Cover with the other half of the dough by crumbling it over the filling.
Sprinkle the reserved grated cheese on the surface and drizzle with a little extra virgin olive oil.
Bake the savory crumbled cake with potatoes and speck in the center rack of the oven for at least 30 minutes, then switch to grill mode to brown the top for another 10 minutes.
