The Gorizia rose is the most prestigious and expensive radicchio, with a beautiful intense color and a bud-like shape reminiscent of a precious and elegant rose. Its flavor is decisive yet delicate, pleasantly bitter with a hint of hazelnut, while the texture is crunchy.
It is a Slow Food Presidium, its cultivation is long and laborious like that of the more widespread late Treviso radicchio, but its size is much smaller. There is also the Canary radicchio subtype, predominantly yellow and very hard to find.
Tradition sees it eaten raw with eggs or accompanied by beans or fried pork cracklings (fricis, frizis, le frizzis).
What is its price? The price of Gorizia radicchio is steep, ranging from 12 to 30 euros per kilogram. Here is the online sale.

Roasted Gorizia Rose
- 2 heads Gorizia Rose Radicchio (from Sacile or Isonzo)
- to taste salt (and optionally chili powder)
- 1 drizzle extra virgin olive oil
- Baking Dish flat
Roasted Gorizia Rose
Wash the Gorizia roses, then cut them into regular wedges.
Place in an oven-safe dish and simply season with a little salt and extra virgin olive oil.
Bake at 320 °F, on a low rack of the static oven, for 8 – 10 minutes or until the outer leaves are slightly wilted and the radicchio heart is still partially raw.
Serve hot or cold with a little balsamic vinegar or a drizzle of maple syrup (or honey for non-vegans).

STORAGE of Gorizia Rose
Fresh radicchio can be stored for one week in the vegetable drawer of the refrigerator.
