Mini Filo Pastry Strudels

Mini filo pastry strudels with apples and cinnamon. They are very easy and quick to prepare.

Besides being super quick to prepare, it’s also very healthy: filo pastry is indeed very convenient, and even in the ready-made version that can be purchased at the supermarket, it contains very few ingredients and almost zero fat!

Summarizing, this is a delicious but healthy, quick, vegan, and also economical recipe… what more could you wish for?!

For strudels, you usually use Reinette apples, but I don’t particularly love them for their main characteristic, their mealiness. I prefer Golden or sweet and juicy apples, but you can use your favorite without the strudel being affected.

The result is still really great, try it to believe it.

It takes a lot of calm and a lot of patience, but you’ll see it’s not as difficult as it seems!

Ingredients for Mini Filo Pastry Strudels

  • 2 Golden apples (large)
  • 1 package filo pastry (300 grams)
  • 1.4 oz raisins
  • 1.4 oz pine nuts
  • 1 tsp ground cinnamon
  • 1/3 cup sugar
  • 3 tbsps rum (or water)
  • 2 tbsps brown sugar (for optional sprinkling)
  • as needed vegetable oil
  • 2 tbsps breadcrumbs
  • Half lemon (juice)
  • as needed sugar (for sprinkling)

Steps for Mini Filo Pastry Strudels

  • Start by peeling the apples, then cut them into cubes and add the juice of half a lemon.

    In a pan, toast the pine nuts for a couple of minutes, then let them cool down.

    In another pan, put the cubed apples and sugar, add a sprinkle of ground cinnamon, and let them cook for a few minutes to soften.

  • Pour the apples into a bowl, removing the liquids they have released, and let them cool.

    (Soak the raisins in rum or warm water if you prefer for 15 minutes. Squeeze the raisins well)

    Then add the raisins, pine nuts, and finally two tablespoons of breadcrumbs to the apples.

    Mix everything to combine all the ingredients.

  • Place a sheet of filo pastry on the work surface.

    Take the filo pastry and cut each sheet in half lengthwise.

    Overlap the strips obtained three by three, brushing between the layers with vegetable oil.

  • Place about a tablespoon of apples at the end of the overlapped filo pastry.

  • Start closing the rolls by folding the sides, covering the two ends with the excess pastry.

    Then roll the mini strudel lengthwise and place it in a mold with the seam side down.

  • Continue in this way until all the ingredients are used up.

    Place the mini strudels on the baking sheet, covered with parchment paper, and brush them with a layer of oil on the outside too.

    A light sprinkle of brown sugar.

  • Place everything in a ventilated oven at 375°F, and bake for about 12/15 minutes, or until the pastry is slightly golden and crisp.

  • The mini filo pastry strudels with apples and cinnamon are ready.

    Remove them from the oven and let them cool for a few minutes.

    If you like, dust the surface with powdered sugar before serving.

Suggestions

Air fryer cooking. Set the fryer at 320°F and cook for 10 minutes plus another 5 minutes at 355°F. Only when they have cooled down, sprinkle with powdered sugar. Anyway, keep an eye on them.

Just remember it must always be brushed with melted butter or vegetable oil while you use it, otherwise, it dries and breaks.
