A dish rich in aromas and flavors with a base of simply peeled red lentils and many spices typical of Indian cuisine, which not only add flavor but also an intoxicating color and aroma.

Ingredients for Red Lentil Dahl
- 7 oz peeled red lentils
- Half onion (small)
- 1 clove garlic
- 1 leaf bay leaf
- 2 tbsp tomato sauce
- Half tsp curry
- Half tsp turmeric powder
- 1 pinch paprika
- 2 pinches salt
- 3.5 fl oz coconut milk
- 1 tsp ginger powder
Preparation of Red Lentil Dahl
To prepare the Red Lentil Dahl, first rinse the lentils very well under cold running water to remove any impurities.
Finely chop the onion and peel the garlic clove, leaving it whole.
In a high-sided pot, heat a little extra virgin olive oil and then sauté the onion with the garlic clove.
Add the spices and toast them (if you prefer, you can use 0.4 inches of fresh grated ginger), remove the garlic clove.
Add the tomato sauce, salt, and incorporate the lentils and the bay leaf, cover with water.
Cook the Dahl over low heat and uncovered for 15 minutes, adding a little hot water if it dries out too much.
Incorporate the coconut milk and continue cooking for another 4/5 minutes, checking the lentils’ doneness.
Remove the bay leaf and serve accompanied by boiled basmati rice and naan bread or toasted rustic bread.
