- 2 oz red Tropea onion
- 2 cloves garlic
- 2 chilies
- 1 carrot
- 1 stalk celery
- 1.3 lbs sausage (I make it at home)
- 3 cups tomato puree
- 1 leaf bay leaf
- to taste salt
- Half glass wine
- 12 oz pasta
- to taste basil

- 1 Knife
- 1 Pot
- 1 Cutting Board

To prepare the
With the pot recipe, peel the onion and garlic, core the celery and carrot, cut them into coarse pieces, and then chop them using a food processor.
Remove the casing from 200 grams (about 7 oz) of sausage and crumble it.
Let’s start cooking.
Place the onion, celery, garlic, carrot, and chili in the wok along with some extra virgin olive oil, and sauté over low heat,
Add the crumbled sausage, one bay leaf, some basil, and let it all brown. Deglaze with the wine and let it evaporate.
At this point, you can add the sausage pieces that remain whole,
And finally, the tomato puree.Lower the heat and let it cook for 30 minutes with a splatter guard on top,
in the meantime, bring the water for the pasta to a boil.

Place the rest of the sausage in the Varoma, close and cook for 20 minutes at Varoma temperature speed 1 reverse direction.
In the meantime, cook the pasta, and as soon as it’s al dente, toss it with the sauce.
