  • 2 1/2 cups all-purpose flour
  • 3 eggs
  • 3/4 cup sugar
  • 1/3 cup sunflower oil
  • 1/2 cup orange juice (and grated zest)
  • 1 cup cleaned carrots
  • 1 packet baking powder
  • powdered sugar (for dusting)

LET’S PREPARE THE DESSERT

  • Place the cleaned carrots, oil, orange juice, and zest in the blender or food processor bowl and blend. Add the eggs with sugar without stopping the mixer and finally, add the sifted flour with the baking powder. Pour everything into a greased and floured air fryer bundt cake pan and bake using the dessert program at 320°F for about 20 minutes, but adjust according to your fryer; mine has two heating elements. If you want, you can bake in an oven at 356°F for about 35/40 minutes. Remove from oven and dust with powdered sugar.
