Ingredients for preparing the mini pizzas
- 4 cups flour with 12.5 g protein
- 1.7 cups water
- 2 tsp salt
- 1 tbsp active dry yeast
- as needed extra virgin olive oil
- 1 tsp malt
- 7 oz tomato sauce
- 1 tbsp oregano
- as needed extra virgin olive oil
- 14 oz mozzarella
- 2 tbsp
- 4 cups remilled durum wheat semolina

Steps for preparing the bakery mini pizzas
In a bowl, mix salt and flour. Add water and yeast. Mix with a spoon for a few minutes and cover. Let it rest for an hour. After the resting time, pour a drizzle of oil and make folds by taking the dough from the outer part (the one sticking to the bowl) and bringing it towards the center. Cover and let rest for 20 minutes.
Lift the dough and fold it in half. Turn the dough 90° and repeat the operation 4-5 times. You will feel the dough becoming more cohesive and resistant. Cover again and let rest for 30 minutes.
In a baking sheet, put plenty of remilled semolina. Portion the dough. Place each new dough ball on the semolina and stretch it with your fingertips, forming a round shape to make the mini pizza. Remove the excess semolina and place the mini pizza on a baking sheet lined with parchment paper.
Season the tomato sauce with oil, salt, and oregano. Dress the mini pizzas with the sauce, add a drizzle of oil, and bake at 390°F (200°C) with fan, for 10 minutes. Take out of the oven and top with diced mozzarella, then bake again for another 10 minutes. Garnish with fresh basil and bring to the table.
