Lady’s Kisses are sweets originating from Piedmont, specifically from the city of Tortona. Born in the 1800s, initially made with almonds and later with hazelnuts, cheaper as a local product, it is the most romantic dessert ever. They owe their name because they are composed of two pastry domes joined by chocolate that resemble lips ready to give a kiss. With the same dough, you can prepare the Lady’s Kiss Tart.

  • 3.5 oz all-purpose flour
  • 0.7 oz 75% dark chocolate
  • 3.5 oz sugar
  • 3.5 oz butter
  • 1 pinch fine salt
  • 2.8 oz 75% dark chocolate

Steps

  • Pour the hazelnuts with the sugar into the mixer and grind them until they become powder. Then add the cold butter from the fridge, the flour, 0.7 oz of chocolate, and a pinch of salt. Mix well, form a dough, wrap it in plastic wrap, and let it rest in the fridge for 15 minutes.

  • Take small balls of dough a little smaller than a cherry and place them spaced apart on the baking sheet with a sheet of parchment paper on top. Keep them in the fridge for another 15 minutes. Preheat the oven to 340 degrees Fahrenheit in static mode and bake. Cook the Lady’s Kisses for 16 minutes at medium height, being careful not to let them darken. Meanwhile, melt the chocolate in a double boiler or in the microwave and let it cool so that it thickens a little. When the kisses are cold, put a little chocolate on one base, couple the hemispheres, and let them solidify. And if one kiss leads to another… they’ll soon be gone!
