Noodles with Peanut Butter Sauce

A tasty, super creamy dish, easy to prepare, noodles with peanut butter sauce are made very quickly and are delicious. Slightly spicy, but the chili pepper is optional, they are an original dish, like soy spaghetti, to bring a different first course to the table that requires just a few minutes to make. I added chopped parsley, but fresh spring onion also fits perfectly.

Ingredients for Preparing Noodles with Peanut Butter Sauce

  • 8.8 oz noodles
  • 1 small onion
  • 3 tbsps extra virgin olive oil
  • 2 tbsps soy sauce
  • 3.4 oz water
  • 1 tbsp tomato paste
  • 1 tsp chili powder
  • 2 tbsps peanut butter
  • 1 tbsp chopped parsley
  • 1.4 oz peanuts

Steps for Preparing Noodles with Peanut Butter Sauce

  • Coarsely chop an onion. Sauté it in a pan with a splash of oil. Deglaze with the soy sauce. Add the tomato paste and water.

  • Reduce the sauce. Add the chili powder and mix until it becomes a cream. Boil the noodles and drain them al dente, reserving some of the cooking water.

  • Add the noodles to the pan with the peanut butter sauce and toss, adding some of the cooking water. Serve with chopped parsley and peanuts.

Storage

Serve the seasoned noodles immediately to prevent them from drying out too much.
