In this case, we steamed them to retain all the organoleptic substances that would otherwise be lost with water cooking.
After every feast or when you want something light yet tasty, broccoli florets gratin is perfect.
Very few ingredients for a dish to eat alone or accompanied with lemon chicken strips.

Ingredients for Broccoli Florets Gratin
- 1 broccoli
- 2 pinches salt
- to taste black pepper
- 1 oz Grana Padano cheese, grated
- 3.5 tbsp butter
- 1/4 cup all-purpose flour
- 2 cups milk (also skim or plant-based)
- 2 pinches nutmeg
- to taste salt

Preparation of Broccoli Florets Gratin
To prepare the broccoli florets gratin with béchamel, first clean the broccoli by removing the stalk.
Separate the florets, but keep the stalk to prepare broth or my broccoli béchamel, which you can also use in this recipe.
Wash the broccoli florets and steam cook them in a pot with an inch of water, place the steamer basket and cover with the lid.
Cook for 5/6 minutes, they should remain rather crunchy.
Meanwhile, prepare the béchamel by melting the butter in a saucepan, add the flour and incorporate it over heat until it detaches from the sides.
Add the milk, stir quickly with a whisk to dissolve everything, and bring the béchamel to cooking.
If you want a faster cooking without having to stir continuously, you can make the béchamel in the microwave.
Once cooked, season with salt and grated nutmeg and set aside for a moment.
Once the broccoli is cooked and the béchamel is ready, line a baking pan with parchment paper and preheat the oven to 392°F.
Divide each broccoli floret in half and arrange them spaced apart in the baking pan, using a glass or meat tenderizer press them well.
Sprinkle the smashed broccoli with grated cheese and spread the freshly made béchamel on top.
Bake and cook the broccoli florets with béchamel for at least 15 minutes, if you want a golden crust, turn on the grill for 5 minutes.

How to store Broccoli Florets Gratin with Béchamel
You can keep them in the refrigerator well sealed in an airtight container for 2 days.
They can then be reheated in the oven, microwave, or pan.
