Tasty Braised Cod

Those who follow me know that I love cod and cook it in many ways. Every week, usually on Friday, I go to Diego, my trusted fishmonger, and buy my piece already desalted and ready to be cooked. This time, I propose tasty braised cod with Taggiasca olives, capers, and my capuliato that always adds that extra flavor. And what can I say, put lots of bread on the table for the scarpetta.

Ingredients

  • 24.7 oz desalted cod
  • 1 cup tomato sauce
  • 0.85 cup water (hot)
  • 2 tbsp Taggiasca olives (pitted)
  • 2 tbsp salted capers (desalted)
  • 1 tbsp sun-dried tomato pesto (Capuliato)
  • 1 clove garlic
  • 2 tbsp extra virgin olive oil
  • 0.7 oz flour (to coat the cod)

Steps

  • Pour the oil into a pot or pan, add the chopped olives, capers, and Capuliato. Sauté for a few seconds and then add the tomato sauce diluted with hot water. Rinse the cod keeping the skin on, cut it into small pieces and remove the bones. Dry the pieces with paper towels and coat them in flour. Place the cod pieces in the sauce and cook over low heat for 30 minutes, gently turning them halfway through cooking. Once the sauce has thickened, turn off the heat. Serve the Tasty Braised Cod on plates and prepare the bread because the scarpetta is a must.
