Baked Rice with Spinach, a delicious and cheesy main dish, easy to prepare and just as good as the classic baked rice. A rich and flavorful dish that we can enrich with any stringy cheese we like, to be prepared in advance and browned at the last moment. I used fresh spinach, but you can also prepare it with frozen spinach, previously blanched. Let’s get to work and prepare baked rice with spinach together.

- 2 cups rice
- 3 1/4 cups vegetable broth
- 10 1/2 oz spinach
- 3 tbsps butter
- 1/2 cup grated Parmesan
- to taste extra virgin olive oil
- 10 1/2 oz mozzarella

Steps for Preparing Baked Rice with Spinach
Toast the rice in a saucepan without adding fats. Heat the vegetable broth, which should simmer. Add it little by little to the rice, bringing it to half-cooked while stirring often.
Add the washed and dried spinach (you can add them raw or blanch them to reduce volume). Cook for about 5 more minutes. Even if it’s rather al dente, remove it from the heat, add butter and half of the Parmesan, and mix well.
Cut the mozzarella into cubes. Butter a baking dish. Make a layer of rice and spinach, put some mozzarella cubes. Make more layers until the ingredients are finished (I made 3 layers of rice and 3 of mozzarella). Cover with Parmesan, a drizzle of oil, and bake at 392°F, static for about 20 minutes. Serve the steaming rice.
Storage
You can prepare the rice in advance and brown it at the last moment. You can store it for a couple of days.
