Baked Broccoli Fritters

The Baked Broccoli Fritters are perfect as a tasty side dish but also as a vegetarian appetizer they will be very appreciated.

Simply made with raw broccoli grated or better yet chopped in a food processor with the rest of the ingredients.

This way the broccoli, and usually the rest of the vegetables, retain their properties that would normally be lost in cooking water.

Same principle as zucchini fritters only these are cooked in a pan while today’s recipe is baked.

Ingredients for Baked Broccoli Fritters

  • 12 oz broccoli
  • 2/3 cup potato starch
  • 2 eggs (medium)
  • 1 cup grated Parmesan cheese
  • 2 pinches salt
  • to taste black pepper

Tools

  • 1 Baking Sheet for oven
  • 1 Round Cutter round, 2.5 inches in diameter
  • Parchment Paper
  • 1 Food Processor

Preparation of Baked Broccoli Fritters

  • To prepare the Baked Broccoli Croquettes first wash the broccoli and detach the florets.

  • In a food processor or kitchen robot, insert the broccoli florets (raw), add the eggs, the starch, and the grated cheese.

  • Chop everything very well, salt and pepper, and if you want, add some fresh parsley, chopping it together.

  • Everything is ready to bake the Broccoli Fritters, so preheat the oven to static mode at 392°F.

    Line a baking sheet with parchment paper.

  • Place a round cutter of 2.5/3 inches in diameter on the parchment paper and insert 2 tablespoons of mixture inside.

  • Press well to compact the broccoli croquettes and continue forming the others, gently removing the round cutter each time.

  • Bake the broccoli croquettes on the middle shelf of the oven for at least 18/20 minutes.

    If you want a more golden result, in the last 5 minutes, activate the grill and move the baking sheet as high as possible.

How to Store Baked Broccoli Fritters

You can store them in the refrigerator well closed in an airtight container for 2 days.

  • What can I use instead of potato starch?

    You can use cornstarch in equal amounts.

  • How can I make them tastier?

    If you want them more flavorful, you can add a clove of garlic or 1 small carrot to the food processor to give more color and a slightly sweet flavor.
