This sweet puff pastry with fruit is very good and quick to make, and I just made a mistake by putting too little fruit in the filling because we ate it in no time, for snacks and breakfasts… So I recommend making it richer in flavors, and I’m sure you won’t go wrong… Here are the measurements!

Ingredients
- 2 rectangular puff pastry
- 21.2 oz fresh fruit (total among peaches, apricots, apples, raisins, chopped almonds, etc.)
- 3 tbsp sugar
- 1/2 lemon (juice only)
- 1 tbsp brandy (or rum)
- to taste milk
- to taste sugar (some granulated, some brown)

Steps
1) First, cut all the selected fruit into pieces (halve the grapes) and put it in a bowl, then sprinkle it with lemon juice.
2) Then add dried fruit, liquor, sugar and let it rest for about 30 minutes.
3) Take the first roll of puff pastry and, with a rolling pin, leaving it with the baking paper underneath as it’s usually sold, roll it slightly until it becomes almost rectangular (if you already found it in this shape, even better…)
4) Fold it in half and, leaving a couple of inches from the edge, make vertical cuts about half an inch apart.
5) Take the second roll, roll it out slightly with a rolling pin and sprinkle it with the fruit: do not add too much of the juice formed because it could make the pastry too moist and burn during cooking!
6) Now cover it with the first roll of puff pastry that was cut (as shown above) and then reopened, and seal the edges of the pastry well. Using a brush, brush the strips of pastry with milk and sprinkle them with granulated sugar.
7) Now bake everything at 356°F for about 30/35 minutes until golden brown, always being careful not to let it brown too quickly… if necessary, cover it with aluminum foil.
8) With Andrea, we enjoyed it with the inevitable sprinkle of powdered sugar and a huge dollop of whipped cream!!

It’s not bad even if prepared with shortcrust pastry and we can put all the fruit we prefer!
Oh… perhaps we can spread a layer of peach or apricot jam before adding the mixed fruit in chunks and, in addition to sugar, we can also add a pinch of cinnamon powder what do you think, would it work?????
