BAKED FETA WITH LEMONS AND ONIONS

After working in Greek cuisine restaurants and pubs for a few years, I started to love feta, the famous Greek cheese, and today I prepared baked feta with lemon and onions which requires quick cooking so we don’t get too stressed in the kitchen heat!

It was for me a unique dish and I must say I liked it a lot, and I even ate the slices of lemon which then seem like candied fruit, and with the onion, they pair superbly!

In the kitchen, I had a Tropea onion and I used that, adding to the recipe of Greek feta cooked in the oven also oregano and thyme in abundance along with a drizzle of good quality extra virgin olive oil.

Ingredients

  • 4 slices feta
  • 5.3 oz Taggiasca olives (for me pitted from ALDI)
  • 2 lemons (organic or untreated)
  • to taste fresh chili
  • to taste extra virgin olive oil
  • to taste thyme (I only had dried unfortunately!)
  • to taste dried oregano
  • to taste salt (be aware of the feta's saltiness! ADJUST ACCORDINGLY!)

Steps

  • 1) For the baked feta recipe with spices and lemon, line the baking dish with parchment paper and place the slices of Greek feta.

    2) Peel the onions and cut them into wedges.

    3) Wash the lemons and cut them into slices, not too thick!

    4) Place here and there red onion wedges and slices of organic or untreated lemons, then add extra virgin olive oil, a pinch of salt, and pitted Taggiasca olives.

    5) Sprinkle everything with dried oregano and thyme and bake at 375°F (190°C) for about 25 minutes or according to your oven’s features and your taste, more or less golden.

    6) I would say we can sit at the table, eh!!!!

The red onion is exquisite but if you don’t have it, opt for golden or white, the addition of aromatic herbs is essential to enhance the taste and aroma!
